able to quickly divide dough mix / pastry mix into equally weighted rounded pieces of dough so that they are all the right size & shape
& are ready for baking.

do not need to cut them into equal portions & roll & round them by hand.
By ensuing they are all uniform shape, size, dimensions & weight, it ensures that there is consistency across the product – so that they
all look & feel the same are the same size for each and every customer & also very importantly that correct cooking of each and every
portion is ensured. For example lager bread rolls could be uncooked whilst smaller bread rolls could burn as such it is very important
to ensure that each product is exactly the same size, shape & dimensions.
By dividing the bakery / pastry dough into equal rounds it ensures that baked goods including round bread rolls, bagels, doughnuts
are all baked evenly meaning that there is less chance of burning individual baked, boiled or fried goods, as they are all evenly sized.
