History

The history of Catering is a journey from survival and royal excess to the high-tech, efficiency-driven industry we see today. It has always been a reflection of social status and technological capability.

Ancient Foundations: Hospitality as Duty


In ancient cultures (Greeks, Romans, Egyptians), “catering” wasn’t a business—it was a religious and social obligation.

ANCIENT GREECE:

The concept of Xenia (guest-friendship) meant you were obligated to provide food and shelter to travellers.

THE ROMAN EMPIRE:

The Romans were the first to establish “inns” along trade routes.

Massive banquets were a show of power, often featuring “equipment” like lead-lined wine coolers and massive brick ovens.

The Middle Ages:


Catering began to take a professional shape in Europe during the 12th and 13th centuries.

Monasteries & Inns: were the primary “caterers” for pilgrims and soldiers.

The Great Halls: where Royal feasts involved hundreds of staff.

During this time, equipment used to cook food was very basic and extremely simple.

Food was cooked over open hearths using massive iron spit-roasts. Large stews were cooked in cauldrons.

Guilds: In France, “Charcutiers” and “Traiteurs” (caterers) formed guilds to regulate the preparation and sale of cooked meats.

18th & 19th Century: The “Golden Age:

The French Revolution (1789) was a massive catalyst for catering.


The French Revolution resulted in the fall of French aristocracy which lead to the unemployment of many royal chefs. During this time many of tehse royal chefs began opening their own restaurants and catering businesses for the public.

In the year 1765, Robert Boulanger: was credited with opening the first “restaurant”.

During the Industrial Revolution, the cast iron range of cooking equipment was brought to market.

Cooking with cast iron equipment provided chefs with tehg ability to be able to control cooking heat intensity and and heat with more precision that cooking on open fires.

In the late 1800’s Auguste Escoffier revolutionised the ‘commercial kitchen’ which at the time was referred to as a “Brigade System,” where staff were organised into specialised roles and duties, standardising how equipment was used.

20’th CentuarY & the Tech Explosion:

The birth of modern catering equipment as we know it today, occurred in the mid 1900’s.

1920s – 1940s: Due to the innovation of refrigeration and the invention of the electric refrigerator, which was a game changer for catering as food could now be prepped and cooked in advance of gatehrings and events.

1940s: Percy Spencer (Raytheon) accidentally discovered the microwave, which would eventually revolutionise “re-thermalizing” food for large events.

1960s: saw the invention and introduction of the convection oven to market which allowed for consistent baking and cooking on a large scale.

1970s: The Combi Oven (Combination Oven – combining steam and dry heat) was invented by Rational Germany. Arguably one of the most important inventions in in the history of catering technology and commercial kitchen equipment.

2026 – The Smart, Green Era & Sustainable Catering Solutions:

Today, the history of catering has evolved from fire pit to the cloud.

Induction & Automation: Moving away from gas to more precise means of cooking with high-efficiency induction and automation through robotic kitchen assistants and self cleaning equipment. Energy Efficient Kitchen Equipment.
