History

Era of Hand Tools

For centuries, tools of the trade were merely hand tools.

The primary tools used were:

  • Cleaver and Scimitar: Heavy blades designed to split bone and joint carcasses.
  • Manual Bone Saw: A simple frame saw used for precision cuts.
  • Hand-Crank Grinder: Invented in the early 19th century by Karl Drais, this was the first real “machine” that allowed butchers to produce minced meat efficiently rather than chopping it by hand for hours.
Steam & Early Mechanics

As populations grew and cities starting expanding, the need for mass produced meat increased.

Leading to the industrialisation of the trade of butchery.

  • The Disassembly Line (in the 1860’s) the packing house was introduced predominantly in Chicago, USA. Where hanging carcasses were moved around on hooks passing by workers who would perform various tasks. This process was inspired by John Ford’s automotive line.
  • Power Grinders: Large-scale meat grinders were powered by steam engines. Allowing for mass production of sausages and canned meats.
Electrical Revolution

The local butchers shop was transformed with the invention of small electric motors,

  • Electric Band Saws which were introduced to market in the 1920’s revolutionised the trade. This invention provided butchers with a means of being able to cut through bone and frozen meat with speed, it also no longer required teh same physical exertion to be able to do so.
  • Slicing Machines were invented in 1898 by Wilhelm Berkel. These meat slicing machines were initially hand cranked with a fly wheel. By the 1920’s when these machines became motorised they provided butchers with the ability of being able. to quickly cut paper thin deli-slices of meat.
  • The invention of Refrigeration allowed butchers to be able to safely store and display meat for sale.
Modern Technological Advances

The industry has evolved and now has a strong focus and places a large emphasis on safety, hygiene, precision, and yield (getting the most meat from the bone).

  • Vacuum Tumblers: Rotate and massage meat in a vacuum whilst being tumbled. This forces marinades and brines into the muscle fibers of the meat in minutes as opposed to days.
  • Automated Portioning: There are more forms of precision equipment available to provide exact weights of meat and portion control ensuring the butcher is able to maximise profits. There is also technology available that is capable of providing precision slicing utilising lasers and 3D technology to cut and slice meat at high speed with perfect results every time.
  • Robotic Butchery: Large Meat Processing plants can now utilise robotics to handle dangerous tasks such as “deboning” or splitting carcasses. The technological advances in machinery and computers can now provide AI and X-ray vision to identify bone structures.
