How do Deck Ovens work?

Deck ovens use conduction heat to bake products. Conduction heating is a process whereby heat travels directly from a hot stone or deck, to the loaf of bread or sheet pan being baked. As such these ovens are perfect for bakers & bakeries.

Deck ovens also use radiant heat, a process that uses infrared heat waves to penetrate into the dough, which ensures that the dough is evenly heated & evenly baked during the baking process.

What Is the Difference Between a Convection Oven & a Deck Oven?

Both Convection Ovens & Deck Ovens have an important part to play in a bakery or food producers commercial kitchen.

If you really want to select the correct oven for your particular baking needs or for a particular baking job then this will help determine exactly what type of oven will. Best meet your specific requirements or the specific specific baking requirements of a of particular product.  For example of you are looking to bake creamy cheesecakes or you want to bake perfect crusty loaves of bread or sourdough bread then the best type of oven required to meet these varied baking requirements will differ.

What Is a Deck Oven?

A Deck Oven is of paramount importance for any artisan baker looking to bake a perfect crusty loaf or sourdough bread.  It is a crucial piece of equipment to ensure quality products can be produced each & every time.  Having a deck oven for a beer is as important for a baker if not even more important than having a spiral dough mixer .  Although deck ovens may be larger than most convection ovens, they provide a baker with the mans of being able to produce perfect loaves of bread each & every time they bake.  Guaranteed results during every baking session.  The perfect master piece can be easily be created & produced without much fuss.

The ability to add steam with Deck ovens is also key in the bread baking process.  Deck Ovens are also very good at retaining heat (retaining temperatures) adding to them being the perfect solution for that perfect crust & inevitably the perfect loaf of bread.
